5+ REASONS TO ENJOY COLLARD GREENS AND BLACK-EYED PEAS YEAR ROUND

For centuries, collard greens and black-eyed peas have been staples on our kitchen tables every New Year’s Day.

Collards are believed to attract financial abundance, and peas have been said to bring on a hefty dose of good luck. Two very good reasons, huh?!

But unbeknownst to many, these staples are also highly nutritious. In fact, so healthy you may want to add them to your dinner plates throughout the year.

Lots of Healthy Goodness!

Both collard greens and black-eyed peas are great sources of:

  1. Antioxidants
  2. Vitamins A, C and K
  3. Calcium
  4. Potassium
  5. Folate

These staples can also:

  • Aid in digestion
  • Lower your cholesterol
  • Improve overall heart health
  • Strength your bones and
  • Help prevent osteoporosis

They both have a low glycemic index, which is good for diabetics and helps keep blood sugar levels in check.

And they are rich in folate, a much-needed nutrient for pregnant women and small children.

While tradition alone is enough to keep this healthy duo on our New Year’s menus, I’m hoping their nutritional values will encourage you to add them to your diet year round.
